I am definitely trying these.  I have a deficit of dark-leafy veg in my diet.

here&#039;s something I made yesterday and loved:

Beets with Parmesan.  
Just cut off ends and wash beets.  Halve them and boil until tender.  Plunge into cold water and rub them... the skin will slip off if they are cooked. (easy and fun!)

Cut into bite-size pieces and Sprinkle with olive oil and balsamic vinegar and top with parmesan shavings, sea salt and black pepper to taste.  Makes eating healthy fun : )</description>
