<p>I am thrilled to bring you a recipe from my absolute FAVOURITE vegan cookie company, <a href="http://www.newmoonkitchen.com/" target="_blank">New Moon Kitchen</a>. Those of you whose children have peanut allergies, or who love healthy baked goods, and, of course, most vegans, know and love this brand. You&#8217;ve no doubt seen them in the natural food stores and wholesome bakeries. It&#8217;s hard not to dive into these like a regular Cookie Monster &#8212; ME WANT COOKIE!  I know, because they gave me a ton to try and share with my family, neighbours, kids&#8217; teachers &#8212; everyone loved the cookies. Nom nom nom!</p>
<p>I think I loved &#8220;Momints&#8221; the most&#8230;, but it&#8217;s really a toss up: I&#8217;m a sucker for those chocolate-chip &#8220;Bite Me&#8221; cookies, too&#8230;.</p>

<p>What we have for you is the recipe by New Moon Kitchen&#8217;s &#8220;Boss Lady/Baker Babe,&#8221; mom-to-be (by now she may have given birth!) Eden Hertzog herself! Thank you, Eden! I haven&#8217;t tried the recipe yet &#8212; I was too eager to post it for YOU, first &#8212; but I can&#8217;t wait! ENJOY!</p>

<h2><span style="font size="><strong>One-Bowl Oatmeal Cookies (made with spelt flour)</strong></span></h2>
<p><span style="font size="> <strong>By Eden Hertzog (New Moon Kitchen)<br />
</strong></span></p>
<p>I consider this recipe to be a cure-all for rainy days, sugar cravings, and something fun and easy to do with kids. Everyone loves fresh baked cookies right out of the oven, and this recipe makes it easy – and also healthy (no eggs, dairy products or nuts – safe for most kids!).</p>
<p>1. Preheat your oven to 350F. Put on your apron!</p>
<p>2. In a large mixing bowl, add the following ingredients:</p>
<p><strong>1 cup liquid sweetener of your choice</strong> – this can be Maple Syrup, Agave Syrup, or Brown Rice syrup. Best to use what you have on hand; these syrups will produce similar results.<br />
<strong>1 cup pure sunflower oil<br />
½ c raw sugar<br />
1 tsp vanilla</strong></p>
<p>3. Mix the ingredients together.</p>
<p>4. Then add:</p>
<p><strong>3 cups quick cooking oats<br />
2 ½ cups light spelt flour<br />
2 tsp baking soda<br />
¾ tsp salt<br />
½ tsp cinnamon</strong></p>
<p>If you feel inclined to add some chocolate to the recipe, throw in a cup of chocolate chips. Or if you’re really being good, use raisins or nuts instead.</p>
<p>*To keep this a one-bowl experience, simply “fluff” the soda/salt/cinnamon into the oats and flour.</p>

<p>5. Now mix the dry ingredients into the wet (that were sitting so patiently on the bottom of the bowl). Do not over-mix or knead this dough &#8211; just fold everything together and be sure that all the dry pockets are gone.</p>
<p>6. Using two spoons, or better yet, an ice cream scoop with a thumb release feature, scoop dough into cookies approx. 1.5” in diameter. If you like a chunky cookie, just leave the batter on the trays as is. If you like a thinner, crisper cookie, press the cookies lightly with the heel of your hand.</p>

<p>7. Bake at 350F for 12-13 mins (or until golden on top)</p>
<p>If you are interested in taking some of the fat and sugar out of these cookies, you can substitute ½ cup of apple sauce and simply remove ¼ c each of oil and liquid sugar. No one will know….</p>

<p>It&#8217;s a wee bit challenging to eat well as a vegan. It&#8217;s like, when you pledge to become a vegan, you also pledge that you will EAT REALLY REALLY WELL. Indeed, part of being a vegan is being gentle and compassionate to your own body. And, I have not been. I&#8217;ve been so preoccupied with my children, and their health and well-being, that I&#8217;ve made no time for my own SELF-CARE. Cooking seems to take too much energy, and all I want at the end of the day, is to sit on my arse and eat sweet, and almond-buttery and BREAD-Y goodness&#8230;. But, my lips are chapped, and my energy is low, and I slip in and out of dark moods all too easily. Not a good sign.</p>
<p>So, <a href="http://cheatymonkey.com/index.php/2009/01/14/popcorn-and-wine/" target="_blank">yesterday, I vowed to make a change</a>. I decided not to make any strict rules that I would end up breaking and berating myself for breaking. Instead, I decided just to eat a little better. To eat some meals and maybe even some greens.</p>
<p>Well, the FREEZING weather here in Canada made it difficult for me to fill my fridge with vegan delicacies (lettuce). But, I did have some KALE in the fridge&#8230;. And, I steamed it with my dinner&#8230;.</p>

<p>&#8230;and it was good. I liked it. I didn&#8217;t put a single seasoning in it, and I LIKED it. Kale is an AMAZING vegetable. It&#8217;s one of the healthiest in the world &#8212; as are most dark-green leafy vegetables. Maybe it was so tasty because my body really needed it&#8230;. I&#8217;m not sure. But, go for it, Gorgeouses. Pick yourself up a bunch of kale, steam it gently in half a cup of water, and enjoy&#8230;.</p>
<p>If your body doesn&#8217;t welcome the plain steamed kale as much as mine does, add a teaspoon of low-sodium soy sauce (or tamari sauce), a minced garlic clove or two, and some pepper. Let us know how you like it!</p>
<p>Guess who else liked it&#8230;? Josh-O and the RASCAL. The monkey didn&#8217;t try it. But, it&#8217;s okay, because she LOVED my latest concoction: &#8220;NATURE&#8217;S CANDY.&#8221;</p>
<p>Last night at dinner, Monkey asked me if she could have CANDY for dessert. Instead of saying &#8220;noooo,&#8221; I said, &#8220;sure! I&#8217;m making you &#8216;Nature&#8217;s Candy.&#8217;&#8221; She was SO. EXCITED. Squealed for joy! When I finished making it, I walked into the dining room and confidently handed her &#8220;Nature&#8217;s Candy.&#8221; And, to my delight (and surprise), SHE LOVED IT.</p>
<p>She loved it SO MUCH&#8230;that she POSED with it&#8230;.</p>

<p>Later, when she was in bed, she said she really liked &#8220;Churchiss Candy.&#8221; So, you better get the recipe, eh, Gorgeouses!? HERE IT IS!!!</p>
<h2><strong><span style="color: #ff00ff;">NATURE&#8217;S CANDY</span></strong></h2>

<p><span style="text-decoration: underline;"><strong>INGREDIENTS (serves 2)</strong></span></p>
<p>1 apple<br />
1 kiwi<br />
Raisins<br />
<em>(Really, any fruit will do; but, the raisins are a must!)</em><br />
Tablespoon walnuts <em>(optional; great for added omega 3s)</em></p>
<p><strong><span style="text-decoration: underline;">INSTRUCTIONS</span></strong></p>
<p>1. Chop up fruit and throw in a bowl.<br />
2. Sprinkle with raisins.<br />
3. Serve with chin up and big smile! AND MAKE SURE YOU CALL IT &#8220;NATURE&#8217;S CANDY,&#8221; or some other name with &#8220;candy&#8221; in it&#8230;. They&#8217;re LOVE IT!  Hee!</p>

Well, I&#8217;m still <span style="text-decoration: line-through;">a little</span> bigger than I&#8217;d like to be this long after BIRTHING Rascal. But, in good time. In good time. In any case, I&#8217;m definitely a cheaty chef. I sneak as much as I can into my children&#8217;s food without them knowing it &#8212; because they are truly picky eaters, and I am truly obsessive compulsive when it comes to their diets. I am MISERABLE knowing my children aren&#8217;t getting EVERYTHING they need EVERY DAY. And, I do whatever I can to avoid the misery by being CHEATY.</p>
<p>Today, I share with you my easiest, yummiest, cheatiest method of getting SPINACH and other good stuff into my children&#8217;s diets&#8230;. And, hey! This is not limited to children, of course. Husbands, boyfriends, girlfriends, CATS, grandmas &#8212; name a loved one &#8212; and YOU will love it, too!</p>
<h2><span style="color: #ff00ff;"><strong>CHEATY&#8217;S SPINACH YOGURT DELIGHT</strong></span></h2>

<p>Looks good, right? You&#8217;d never KNOW there was spinach in there! Now, really, anything goes here. But, the ingredients that follow worked really well. And, the combination of spinach and blueberries is ideal (iron and vitamin C should be ingested together for optimal absorption). The ground nuts provide much-coveted omega 3 fatty acids, an itty-bitty crunch, and a tasty nuttiness &#8212; because I&#8217;m nutty like that&#8230;. Check it:</p>
<p><span style="text-decoration: underline;">INGREDIENTS</span><br />
(Serves 4)</p>
<p><em>Oh gosh. The amounts of everything really vary&#8230;. You have to use your intuition. I&#8217;ll try to gage it here&#8230;.</em></p>
<p>1 cup yogurt <em>(soy, if you&#8217;re vegan like me)</em><br />
1/2 cup frozen spinach<br />
1 cup frozen blueberries<br />
1 oz (2 tbsp) ground almonds/walnuts <em>(if you don&#8217;t have a coffee grinder for grinding nuts and seeds, get one! I use mine all the time. They&#8217;re small and inexpensive.)</em></p>
<p><span style="text-decoration: underline;">INSTRUCTIONS</span></p>
<p>Place all of the ingredients in the blender or food processor and BLEND! If it won&#8217;t blend, just add more yogurt. The monkey&#8217;s loved it.</p>
<p>My little monkeys ate spinach, Gorgeouses. They actually ate spinach! AND, Rascal&#8217;s constipation has been MUCH better thanks to the blueberries, spinach, AND nuts! Sweet.</p>

And, for you non-vegans out there who would like to incorporate more vegetarian meals into their week (please do!), the book does include a few (free-range!) egg and fish recipes.</p>
<p>The recipes I&#8217;ve tried so far have been delish &#8212; not only for me, but for my non-veg hubby and kids. Here are two of them that we&#8217;ve totally enjoyed.</p>

<p>2 cups shredded packed romaine lettuce<br />
1 large orange or 2 tangerines, peeled and chopped (1/2-inch pieces)<br />

2 tbsp NUTTY-EDITH CRUNCH (<em>this is another great recipe on p. 181 of the book, but I just ground raw almonds and walnuts together in a coffee grinder, and it was WICKED &#8216;LICIOUS! A kind of paste formed that mixed GORGEOUSLY with the oil and lemon juice&#8230;.. If you don&#8217;t want to do it my way, the author suggests that you use sunflower seeds if you don&#8217;t feel like making the NUTTY-EDITH CRUNCH</em>)<br />
1 &#8211; 2 tsp flaxseed oil<br />
A small handful of organic golden raisins or dried organic cranberries.</p>
<p>INSTRUCTIONS:</p>
<p>Combine all the ingredients in medium bowl, toss well, and ENJOY!</p>

<p>INGREDIENTS  (Serves 1):</p>
<p>1 medium sweet apple (<em>I might even add some cheaty little blueberries or raisins to this!</em>)<br />
2 tbsp sugar-free jam or organic apple butter</p>
<p>INSTRUCTIONS:</p>
<p>1. Peel the apple, cut it into 8 or more wedges, and discard core.<br />
2. Place the jam or apple butter in a medium-sized skillet and heat at Medium-High, until bubbly.<br />
3. Stir in the apple slices, turn heat down to LOW, cover and simmer for 10 minutes, turning the apples over once.<br />
4. ENJOY!</p>
